Well, that was nice. Not only 500mg metformin weight loss have I virtually had my hands tied to stop eating for all reasons other than hunger the past four days, I also lost weight to boot. 13.6 pounds. That’s a nice number. I won’t do the big breakdown in this little post, but that brings my total weight loss up to 19.4 pounds. I feel good.
I’m sure you want to know what I’m going to indulge in to break my fast…and, for those of you who know my breakfast repertoire this will come as no surprise.
I’m having my usual Toad in a Hole.
Yum.
It’s warm and savory…completely opposite to the last four days of cold, sweet liquid.
I’m finally done with my high-calorie loaf of multi-grain goodness (110 calories a slice) and am cracking open my Lite loaf (40 calories a slice)…which makes a Toad in the Hole of 120 calories after the egg is added.
Sprinkle on a little Smoked Spanish Paprika and I’m dancing cheek to cheek with breakfast, in heaven.
Rah.

How do you make your Toad in a Hole? I love it but haven’t ever MADE it.

Spray a small fry pan with cooking spray (butter is delicious, but the food is still quite tasty using the no-cal spray) and heat at the burner notch just above MED.
Toad in the Hole:
1 piece Lite Bread. Pinch thumb and forefinger together in middle of bread and pull out a hunk. My “Holes” are usually oval.
1 egg. Crack egg into the “Hoval” and sprinkle with pepper and salt. When I’m being fancy, I use Penzey’s Smoked Spanish Paprika (its smokiness is reminiscent of bacon) and Shallot Salt. YUM.
Put the lid on the fry pan and let it cook a couple of minutes. Once the egg white is opaque and turning solid, flip and finish cooking on the other side…usually just one more minute. The trick is to avoid cooking the yolk solid.
Slide it out of the pan and enjoy. All together, it should be about 120 calories…if the bread is unleaded.
